This soup is a classic in our house that’s loved by everyone. Chicken and risoni soup is perfect when someone’s unwell because it’s warming to help unblock sinuses and its loaded with nutrients and water for hydration. It’s also very easy to make and won’t keep you in the kitchen for long. When our toddler went through a soup hating stage, I just drained the liquid from her bowl and called it ‘casserole’ – she loved it!
You can very easily swap the vegetables in this recipe to suit your family’s preferences or whats in the fridge. You could keep it simple and switch the carrot and celery with 1 1/2 cups of frozen peas and corn added in at step 6 too.

Love your recipes and so does my son. He’s autistic and I have spent the last 21 years trying to find recipes that he’ll eat other than pasta, pasta and more pasta.

I’m so glad Kaylene! Do you follow me on Facebook or Instagram? I’d love to hear which others he has tried and liked. Does he get involved in shopping or cooking too?
