Air fryers have been around for a while, but have recently had a resurgence with newer cheaper models including the Kmart version for just $69. They’re not just for rehearing frozen chips and crumbled chicken though! Air fryers are an excellent way of cooking roast vegetables in a hurry – including greens.
Even if Brussels sprouts are your least favourite vegetable, 8 minutes in the air fryer transforms them into a sweet and crunchy delicacy – not at all similar to the boiled grey variety you remember from your childhood.
Air Fyer Brussels Sprouts and Broccoli
Serves 2
Ingredients
1 cup of Brussels sprouts, halved
1 cup of broccoli, thickly sliced
1 tablespoon extra virgin olive oil
1 tablepsoon balsamic vinegar
How to:
1. Add the Brussels Sprouts and broccoli to a medium sized mixing bowl.
2. Drizzle over the oil and balsamic and mix well to combine.
3. Add the vegetables to the air fryer basket and cook on 200C for 8-10 minutes.
4. Serve these with my healthy air fryer chicken nuggets and chips. Dinner on the table in under 15 minutes!
If you don’t have an air fryer, arrange the Brussels sprouts and broccoli over a baking sheet sprayed with olive oil. Bake in a preheated oven at 200C for 8-10 minutes or until crisp.
