Air fryers aren’t just for reheating frozen foods. Cooking from scratch is made quick and easy with this handy bench top contraption.
My chicken nuggets are easy to make from scratch (no nasties and made with real chicken!) plus they’re a real crowd pleaser.
Crunchy on the outside, tender on the inside and ready in minutes. Give them a go, I guarantee you’ll love them.
Air Fryer Chicken Nuggets
Serves 2
Ingredients
2 slices whole grain bread
1 tspn dried Italian herbs
1 chicken breast, cut into chunks
1/2 cup plain natural or Greek yoghurt
Extra virgin olive oil
How to
1. Blitz the bread in a food processor for a few seconds to make bread crumbs and the dried herbs and blitz again briefly to combine.
2. Place the yoghurt and breadcrumbs in individual bowls ready to coat the chicken.
3. Dip the chicken in the yoghurt and then into the breadcrumbs until coated. Place on a plate and repeat with the remaining nuggets.
4. Place in the air fryer basket and lightly spray with olive oil. Cook on the chicken setting at 180C for 10 minutes.
5. Enjoy these with my air fryer fries and air fryer Brussels sprouts and broccoli.
If you don’t have an air fryer, cook the nuggets in a preheated oven on 180C. Arrange them on a baking tray lined with baking paper and spray with olive oil. Cook for 15 minutes or until just cooked through. Larger chunks of chicken may take 20 minutes.

Hi Sue, Yes just the plain Greek yoghurt; this could be natural or regular unflavoured Greek.
