A colourful take on zucchini slice, this veggie slice recipe cooks quickly and easily in the pie maker. Perfect for a warm winter’s lunch or an easy school lunchbox snack.
Pie Maker Veggie Slice
Serves 6
Ingredients
3 eggs
1/4 cup wholemeal flour (a wheat-free alternative flour will work fine too)
1/4 cup grated cheese
2 cups finely diced or grated vegetables
(eg. sweet potato, capsicum, mushrooms and spring onions.
How to
1. Preheat pie maker.
2. Whisk the eggs together in a mixing bowl. Add the flour and gently stir. Add the remaining ingredients and mix well.
3. Scoop heaped tablespoons of mix into each pie maker hole, then close lid.
4. Cook for 6-7 minutes or until just cooked through.

If you don’t have a pie maker, you can cook these using a muffin tray in a preheated oven at 180C. Generously spray the muffin tray with olive oil. half fill each muffin hole with the mix and bake for 10-15 minutes or until almost set in the middle. The ‘slice’ will set properly as it cools.
